Grandpa's Fig Jam


Fig Jam:
- 2 C dried figs
- 1 to 1 1/2 C sugar, depending on personal sweetness preference
- 1/2 C fresh lemon juice
- 5 C water
- seeds from lemons tied up in cheese cloth
- 1 oz. dark rum or limoncello                  

Place figs in a large pot, then cover with water and bring to a boil. Remove from heat let sit for one hour or until figs are plump. Leave water in pot, remove figs, cut off stems, and medium-finely chop. Add the lemon juice and sugar to the fig water and allow to simmer for 25-30 minutes. Add figs and seeds and bring to a boil until thickened, remove from heat, then take out seeds and add the rum or limoncello and stir well. The jam will fill 7 half-pint jars (perfect emergency gifts!) and can then be processed in a boiling water bath for 20 minutes.
